Video – Warm Dungeness Crab & Sea Asparagus Salad

August 3, 2010 Island Life, Videos - IVTV.ca 11 Comments

My video debut!

It won’t win the James Beard Food Video of the Year (is there such a thing?), but we had fun making it.

You’ll see a short introduction to life here on Pender Island, some live-action food foraging, (and the salad is pretty good too…)Warm Dungeness Crab & Sea Asparagus Salad

I cooked the crab as described in “The School of Essential Ingredients” by Erica Bauermeister, a book I didn’t really care for (and to be honest, didn’t finish).  Claire’s Roasted Crabs, however, are worth the price of the book (in paperback).

Howard’s aversion to crabs (he thinks they’re spidery) means that we only eat dressed crab around here.  And I’m the lucky devil who gets to dig the meat out of all those arachnid-like shells!  That’s a love of food, folks, if I do say so myself.

The other main components of this warm salad were steamed baby new potatoes, blanched mizuna greens and blanched sea asparagus.  The dressing is a luscious mixture of butter, shallots, ginger, garlic, lemon and white wine, and the whole thing is finished with a few other bits you’ll see in the video.  Check it out, or I’ll send this guy after you!

  1. Well I have to say they are very well dressed. They are a bit intimidating when they are staring directly at you, lol:)

  2. Rowie says:

I love seeing all your local food ideas! So creative! I’d love to try some of that sea asparagus! Which beach did you go to for that?

  3. How fun!! Nothing like fresh crabs.

  4. Love fresh crab! Love the video. I, too, dislike digging the meat out, which is why I usually stick to King Crab legs.

  5. Chef Dennis says:

you really have a great camera presence, I think you need to develop a few more video’s with market purchases, and outdoor ingredients if you can, then send a tape to the food network….I would certainly watch it. The beginning of your video really captured my interest and then made me want to watch you as you made your creation.
    Great Job!!

  6. Geez, you sure do know how to make a girl jealous! I wish, wish, wish we had access to fresh crabs down here. I can get shrimp, but I do love crab, even if they do look spidery! Thanks for the amazing video and great post.

  7. Cristina says:

Theresa you have a natural presence in front of the camera, nicely done!

Luv the image capture of the stacked crab trio…it could be framed – Also, really nice site redesign!

Thanks for the feedback Cristina! I’m still working on the stie, trying to make it look a bit less “boxy”…I guess it will always be a work in progress!
