Cheesy Dog Biscuits

These are the Dooze’s new favourite treats — you see, he’s a bit of a cheese nut.

Cheesy Dog Biscuits

Yield:  dozens, depending on the size

Whole Wheat Flour 1 C 250 ml
All Purpose Flour 1 C 250 ml
Corn Meal ¼ C 60 ml
Strong Cheese, grated (cheddar, parmesan, etc) ¼ C 60 ml
Lamb or Beef Trimmings, broiled and finely chopped ¼ C 60 ml
Chicken Stock ¾ C 180 ml
Egg 1 large

C=Cup       ml=millilitres

Preheat oven to 325° F

Stir together the flours, corn meal, cheese and meat trimmings.  In a separate bowl, whisk together the stock and egg.  Add the liquid to the dry and combine well to form a bowl.  Allow to rest, covered with a damp cloth, for 10 minutes.

Roll out to about ¼” thick, and cut into desired shapes and sizes.  Transfer to a cookie sheet and bake until golden, 30-40 minutes.

Cool in a rack, and store in a cool place in an airtight container.
