Dried nettles should work beautifully, Lee Ann! Just fold a pinch or two in at a time until you've got the flavour and colour you want! Let me know how it turns out...Theresa

I am very inspired to make this for a new potato salad I'm thinking about creating this weekend. I'm wondering if I can use dried nettles though....hmmm...

Thanks for stopping by Twyla! I "manage" a patch of nettles in the forest behind our yard. They are delicious -- taste like spinach -- VERY nutritious (full of iron). I don't even bother blanching them anymore, as the oil takes the sting away. They can also be eaten picked straight from the plant, but I'm not brave enough to try that!

You actually grow nettles on purpose? Really? And does blanching them really remove the possibility of stings?
